Date Boat & Nut/Seed Ball Recipes: Enjoy These Healthy Treats!

Thank you to Stephanie of Good Girl Gone Green for this guest post!My favorite snacks are almonds (actually, any nut or seed will do) and dates. I could eat all day long. The nuts are nice and crunchy and the dates are so plump and sweet. A few weeks ago, I just throw a few almonds in my mouth and half a date because I am lazy like that. Can I just say that was one tasty treat, and so easy! I am not saying I was the first person to ever put those two foods together, but I think I was on to something. I like to make healthy treats and have them ready incase we need them on the go or if my daughter is pulling at my leg and I don't have time to prepare something that instant. This is where the date boats come in handy- simple and takes no time at all when you have a screaming hungry kid. Date Boatsdate boats recipeIngredients

  • 1 date
  • 4 almonds or any nut or seed really

 4-step instructions

  • Cut date in half.
  • Take pit out of date.
  • Place 2 almonds or other nut or seeds in each date.
  • Put in mouth and chew.

 Now wasn’t that the easiest snack prep ever? If you have some time on your hands, and want to dust off your blender or food processor, you can make some Nut Balls, which are pretty tasty and easy. Not as easy as the date boats mind you, but good none the less. Nut/Seed Date Ballsnut balls recipeIngredients10 dates1 cup of almonds (if time permits soaked and dehydrated) or any nut or seed.1 tbsp of cinnamon1 tsp or more of almond or vanilla extract or flavorOptional: Add unsweetened cacao powder to the mixture or simply roll the balls in the chocolate powder Instructions

  • Place the nuts in the food processor and blend slightly to break them up.
  • Take all the pits out of the dates, and wash them .
  • Add the dates and remaining ingredients to the almonds in the food processor.
  • Blend until a paste is formed. You might need to scrap down the sides a few times to incorporate better.
  • Once incorporated to your liking, take heaping scoops and shape into balls.
  • Place on a cookie sheet or put in a glass container.
  • I put my in the freezer to firm them up, but you can eat as is or put in the fridge.
