Green & Natural Mama Thursday @ I Thought I Knew Mama

In my 14 months of being a mama, I've been trying my best to live greenly and follow natural parenting practices. One natural parenting practice that I work hard at is feeding with love and respect. For me, this means that I breastfeed, introduced solids when Baby showed signs of readiness with baby led weaning, and try to prepare as many healthy, organic, and unprocessed meals as possible for Baby.
After cruising through various muffin recipes, here is the recipe I came up with for Baby's veggie muffins this week. All three of us are really enjoying them!
Ingredients2 cups of whole wheat flour
3 tablespoons of Happy Bellies Organic Oatmeal Cereal (Baby never ate it as a younger baby so now I try to mix it into recipes to add more iron to the recipe.)
1 12-oz bag of frozen carrots, peas, green beans, and corn - pureed
1 teaspoon of baking soda
1/4 teaspoon of salt
1/3 cup of unsweetened applesauce
1/4 cup of melted butter
3 tablespoons of raw honey
1 egg
1 teaspoon of vanilla extract
Lots of cinnamon
1 whole banana - pureed
Directions:1. Preheat oven to 350.
2. Line muffin tray with muffin liners.
3. Combine all ingredients and mix well with an electric mixer.
4. Fill muffin cups.
5. Bake for 25 minutes.
